
Apple Crumb Coffee Cake

- Apple Filling
- 1 medium apple, chopped
- 2 tablespoons water
- ½ teaspoon apple cider vinegar
- 1 tablespoon monk fruit or coconut nectar
- 1 teaspoon cinnamon
- 1 teaspoon tapioca flour
- Pinch of sea salt โ Apple Cake
- 1 organic pasture-raised egg
- 2 tablespoons applesauce, unsweetened
- 1 tablespoon coconut oil, melted
- ½ teaspoon vanilla extract
- ¼ cup monk fruit or coconut nectar
- 1 cup almond flour
- 2 tablespoons tapioca flour
- ¼ teaspoons baking soda
- โ teaspoon salt
- ¼ teaspoon cardamom
- ¼ teaspoon allspice
- ¼ teaspoon freshly grated ginger root or ground ginger
- ½ teaspoon cinnamon
- ¼ cup chai or vanilla protein powder
- Apple filling
- Crumb topping
- 1 tablespoon ghee or coconut oil, solid
- 1 handful of Simple Mills Snickerdoodle Cookies or Hu Grain-Free Ginger Snap cookies
Instructions:
Preheat the oven to 350 degrees and line an 8X4 loaf pan with parchment paper.
For the apple filling: Heat a shallow pan or small pot to low heat. Add all ingredients of apple filling and stir until combined and thickened. Remove from heat and set aside.
For the apple cake: In a medium bowl, combine all ingredients of apple cake. Use a hand mixer to combine until smooth and all ingredients are incorporated.
Add cool apple filling to cake mixture. Gently fold the apples into the batter.
Pour batter into the prepared loaf pan and gently tap against the counter to evenly set.
For the crumb topping: In a small bowl, combine cookies and ghee or coconut oil. Combine the two with your fingers until you reach a sandy, crumbly consistency.
Top the entire surface of the cake batter with the crumb mixture.
Bake the loaf for 30 minutes, or until a toothpick comes out clean. Enjoy!
