Cauliflower Fried “Rice”

Ingredients:

  • 2 organic, pasture-raised whole eggs
  • 1 package frozen riced cauliflower
  • Frozen vegetable blend (peas, carrots, onions)
  • 2 tablespoons avocado oil
  • 1 tablespoon sesame oil
  • 1 tablespoon coconut aminos
  • Sesame seeds
  • Few dashes of fish sauce *optional
  • Pink salt & cracked pepper to taste

Instructions:

Heat a nonstick skillet over medium heat with 1 tablespoon of avocado oil.

Crack eggs into a pan and scramble. Then, add frozen vegetables, and saute for about 5-7 mins until thawed and soft.

When most of the water has evaporated, season with salt, pepper, and add coconut aminos. Flatten cauli rice out in an even layer and drizzle another tablespoon of avocado oil on top.

Raise heat to medium high and let cauli rice cook untouched to crispen for about 3-5 minutes.

Remove from heat and finish with a drizzle of sesame oil and sesame seeds, if desired.
