Chimichurri Sauce (~3-4 servings)

Ingredients: 

  • 1 + ¼ cup fresh herbs (choose 2-3 of the following: fresh parsley, cilantro, oregano)
  • 1-2 garlic cloves
  • 1-2 tablespoons shallot or onion, chopped
  • Juice of ½ lemon
  • 2 tablespoons red wine vinegar
  • ¼ cup Extra virgin olive oil
  • pink/sea salt, to taste
  • Fresh cracked black pepper, to taste

Instructions:

Combine all ingredients in a high-speed blender or a food processor until smooth. Add more acid and oil for a thinner consistency, less for a thicker consistency. Season with salt and pepper according to preference. Serve with your favorite proteins, over veggies, or as a salad dressing. Store in an airtight container for about a week.
