
Chimichurri Sauce (~3-4 servings)

- 1 + ¼ cup fresh herbs (choose 2-3 of the following: fresh parsley, cilantro, oregano)
- 1-2 garlic cloves
- 1-2 tablespoons shallot or onion, chopped
- Juice of ½ lemon
- 2 tablespoons red wine vinegar
- ¼ cup Extra virgin olive oil
- pink/sea salt, to taste
- Fresh cracked black pepper, to taste
Instructions:
Combine all ingredients in a high-speed blender or a food processor until smooth. Add more acid and oil for a thinner consistency, less for a thicker consistency. Season with salt and pepper according to preference. Serve with your favorite proteins, over veggies, or as a salad dressing. Store in an airtight container for about a week.
