Creamy Cauliflower Mash

Ingredients:

  • 1 head cauliflower, broken into florets
  • 1 tablespoon truffle olive oil or extra virgin olive oil
  • 1 tablespoon pasture-raised butter/ ghee
  • 2 tablespoons Forager Cashew gurt or unsweetened plant-based, dairy-free yogurt
  • Pink/sea salt to taste
  • Fresh cracked black pepper to taste

Instructions:

Insert the steamer basket into a large pot.

Fill the pot with water just before submerging the steamer basket.

Add florets on top of the steamer basket, cover with a lid and steam over simmering water until very tender, almost falling apart.

Spoon about half of the cooked florets into a high-speed blender or food processor and blend on low speed to gently combine.

Remove the lid of the blender or processor and add the remaining cauliflower, olive oil, butter, cashewgurt, and seasonings to taste.

Continue to blend until your desired, creamy consistency. A delicious side dish that goes with anything you’d serve with mashed potatoes!
