
Mashed Sweet Potatoes
Nov 05, 2024Ingredients:
- 4 Medium Sweet Potatoes, diced in even sized cubes (~4 servings) *skin removal is optional
- 1 tablespoon ghee
- 2-3 tablespoons Nut Milk or Plant-Based Yogurt
- 1 teaspoon cinnamon
- 1 teaspoon turmeric
- ¼ teaspoon nutmeg
- Pink or sea salt & cracked pepper to taste
- Handful of chopped raw nuts of choice, toasted
Instructions:
Preheat oven to 425℉ and line a baking dish with parchment paper / foil.
Toss chopped sweet potatoes with ghee and seasonings until thoroughly coated. Spread onto prepared baking dish. Bake for about 30 minutes until fork tender.
While potatoes roast, heat a dry saucepan over medium low heat. Add nuts of choice and toast, making sure to stir often. Remove from heat when just golden and fragrant.
Transfer cooked potatoes to a heat-proof mixing bowl. Add milk or yogurt and seasonings. Using a hand or stand mixer, combine all ingredients and mash potatoes until desired consistency.
Serve with toasted nuts.
*You can also prepare this recipe by steaming the potatoes instead of roasting using a steamer basket on the stove.
