
Mediterranean Meatballs~ 4 servings

- 1 lb grass-fed ground meat, (you can do 50:50 and choose 2 from the following: ground beef, bison, lamb, OR *ground chicken, pork, turkey)
- 2 garlic cloves, grated
- ¼ cup fresh parsley, finely chopped
- ¼ cup fresh cilantro, finely chopped
- ¼ cup fresh mint, finely chopped
- 1 teaspoon cumin
- ½ teaspoon turmeric
- ½ teaspoon cinnamon
- ½ teaspoon paprika
- Zest of ½ lemon
- 1 teaspoon Pink / sea salt
- ½ teaspoon Freshly cracked black pepper
- *if using leaner meats - add 1 egg to mixture to keep moist
Instructions:
Preheat the oven to 425 and line a baking sheet with foil and/or parchment paper.
In a large bowl, combine ground meats, spices, herbs, garlic and lemon zest. Mix well with you hands until evenly distributed.
Roll meat mixture into 2” diameter balls. Place onto the prepared baking sheet, spaced evenly apart and bake until the meatballs are browned and cooked through, about 20 minutes.
Serve meatballs with tzatziki sauce, homemade hummus, greens or roasted veggies, and your favorite sides. Pairs great in a salad with cherry tomatoes, olives, rice or roasted potatoes and Primal Kitchen Lemon Turmeric Dressing.
