Oven Roasted Veggies

Ingredients:

  • 1 head of broccoli, cauliflower, bell pepper, onion, garlic, zucchini, etc - whatever veggies you like!
  • 1 tablespoon avocado oil or healthy fat of choice
  • Sea salt & pepper to taste ○ Additional dried seasoning (garlic, cumin, turmeric, dried herbs), if desired

Instructions:

Preheat oven to 450 degrees F.

Cut all veggies in an even size and add to large baking sheet. Drizzle with avocado oil and seasonings.

Toss veggies with oil and seasonings until evenly coated. Spread into a even layer on baking sheet and roast for about 15 minutes, until veggies are golden and tender.
