Stovetop Broccolini

Ingredients:

  • 1 bunch of broccolini
  • 1 tablespoon avocado oil or ghee
  • 1/2 lemon, zested & juiced
  • 1-2 garlic cloves, minced
  • Pink salt & cracked pepper to taste

Instructions:

Set a steamer basket inside a medium or large pot. Pour just enough water into the pot, making sure the basket is not submerged. Heat pot over medium high and add broccolini into the basket.

Cover pot and steam for about 3 minutes, until broccolini is bright green and al dente. Remove from the pot and set aside to cool and prevent further cooking.

In a large saute pan, heat a tablespoon of avocado oil or ghee. Add lemon zest and garlic, then stir.

Add cooked broccoli to the garlic mixture and cook for about 2 minutes. Add lemon juice, season with salt and pepper. Toss to combine and serve.
