Apple Cinnamon Grain-Free Porridge

Ingredients:

  • 25-30 g vanilla protein or collagen powder
  • 3 tbsp sprouted flaxseed meal
  • 3 tbsp hemp seed hearts
  • ½ apple. Finely diced
  • Juice of ½ lemon or 1 tsp apple cider vinegar
  • 1 tsp cinnamon
  • 2 tsp coconut oil
  • Splash of water
  • ½ cup Non-dairy milk of choice
  • Pinch of sea salt
  • Toppings suggestions - raw pecans, walnuts, or pumpkin seeds

Instructions:

Add diced apple, cinnamon, coconut oil, lemon juice, and water into a small saucepan. Heat over medium heat, stirring often, until apples are tender and cinnamon is fragrant. Remove from heat and set aside to cool.

In a jar or bowl, combine flaxseed meal, hemp hearts, protein / collagen powder, and salt. Add milk and stir until fully combined (add more nut milk or water as needed). You should have a thicker, pancake batter consistency.

Add spiced apples on top of porridge and top with a crunchy nut of choice.

Instructions:
Combine all ingredients (except toppings) in a wide-mouthed jar until well incorporated. Seal with lid and refrigerate for at least an hour or overnight. When ready to eat, top with coconut flakes, nibs, and banana if desired.
