Instant Pot Pulled Pork

Ingredients:

  • 3 lb Pasture-Raised Ham
  • 1 tablespoon Avocado oil, ghee, or tallow
  • 2 tablespoons Smoked paprika
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 1 teaspoon sea salt
  • ½ teaspoon pepper
  • Dash of Cayenne
  • 1 teaspoon Worcestershire Sauce
  • 1 cup stock or bone broth (chicken or beef)
  • ½ cup Bread & Butter pickle juice (or just use water!)
  • Barbecue sauce for serving - Primal Kitchen & Noble Made are my favorite brands!

Instructions:

Add fat of choice to the Instant Pot and set to “Saute” on high for about 10 minutes.

Pat the ham dry and cut into 3-4 large chunks. Pack on dried seasonings on all sides.

Fry each chunk of ham on all sides to brown. Be sure to not overcrowd the pot.

Transfer browned ham chunks to a plate and carefully wipe out any burnt seasonings from the bottom of the pot.

Add in Worcestershire Sauce, stock, pickle juice (if using) or water. Add all the ham back into the pot.

Pressure cook on high for 1 hour and allow it to naturally release.

When cooking is complete, use a pair of forks to evenly shred the ham. Strain ham from the juices and add desired barbecue sauce.

*Save the juices! This makes a wonderful broth to cook your grains in or simply sip and enjoy!
